  除了花鲢鱼头外,白鲢鱼、青鱼的鱼头和牙片鱼头也可用来制作鱼头菜,其做法可蒸、烧、煎、烩,也可扒、炖、煲。不管采用哪一种方法,鱼头的初加工是个关键。对鲜活的鱼头,处置方法只有挖去鱼鳃、冲净血水即可;对于冰鲜或冰冻的鱼头,起首要将鱼头一剖为二,挖出鱼鳃,再用清水冲上一段时间后再用葱段、姜片、料酒腌渍。 7 w, C- J( T: w7 E

  制作:1、洋葱去皮,切圈;青、红椒去籽,切小圈;香菜切长2厘米的段。2、鳙鱼宰杀治净,从尾部4寸处堵截,有鱼尾的部门留作他用;鱼头洗净对半剖开,去掉鱼鳃,鱼身局部去掉中骨,加盐、味精、葱段、姜片腌渍10分钟,拍生粉备用。3、锅入色拉油,烧至六成热时入拍粉的鱼头小火炸3分钟至表皮发硬,捞出控油。四、锅内色拉油烧至七成热时放入调料A小火浸炸1分钟,捞出控油;锅内留油30克,烧至七成热时放入调料B小火煸炒1分钟,加调料C、净水400克、鱼头大火烧开,改慢火烧10分钟至鱼汤浓稠,出锅倒入用洋葱、青尖椒、红尖椒、香菜垫底的平锅内,持续小火炖3-4分钟至洋葱、青椒、红椒、香菜出香离火,四周用切半的油炸压缩饼围边上桌。鱼头上桌后,淋烧热的红油,撒洋葱粒、青椒粒、红椒粒即可。 ! n8 x2 }' C% M" V* J# l

$ T  r3 N% x6 E& r$ }5 k  制作:1、鲢鱼头治净,一剖为二,加桂林辣椒酱腌10分钟;水发木耳撕成5厘米见方的小块;金针菇入沸水中大火汆1分钟,捞出控水;豆腐入沸水中中火汆1分钟,捞出切长8厘米、宽5厘米、厚3厘米的片;辣白菜切长5厘米、宽4厘米的片;肥牛切长3厘米、宽2厘米的片。2、锅入50克花生油,烧至五成热时放入豆腐小火煎2分钟,将豆腐翻过来再小火煎1分钟出锅。3、锅入残余的花生油,烧至五成热时入鱼头小火煎2分钟,将鱼头翻过去再煎2分钟,入沸水中火烧开,放葱、姜、蒜片、白酱小火熬开,将鲜豆腐、鱼卷、魔芋丝、辣白菜、木耳、肥牛放入汤中小火炖15分钟,加日本味素调味,将炖好的原料和汤一起倒入砂锅内。4、把金针菇、茼蒿、肥牛、柠檬片摆放在沙锅下面,淋味口林,撒大蒜粉即可上桌。食历时点燃酒精灯即可。 6 M' R$ k9 ?5 r5 ?" d

  制作:1、鲢鱼头治净,一切为二使之相连;马铃薯去皮,切成重约20克的块,个头小的不必切,间接使用;北豆腐切发展8厘米、宽5厘米、厚3厘米的大块。2、大锅加热,放入豆油烧至七成热,入葱段、姜小火煸炒出香,放入鲢鱼头小火煎3分钟至一面色泽金黄,将鱼头翻过来,再用小火煎另一侧时间约2分钟,入八角、红干椒小火炒香,入大连酱油、盐、味精、清汤、洋芋、北豆腐,盖上锅盖中火烧开后小火炖25分钟左右至熟,出锅装盘,撒上小葱段、香菜即可。 # y9 y2 x  y  W( Q7 p

3 Z/ `' i, b! h, x3 K7 U  制作:1、蒜子剥皮洗净,略微拍松;洋葱去外皮,切长5厘米的粗丝;西芹切厚1厘米的抹刀片。2、鱼头宰杀清洁,对半剖开,冲净血水后加秘制酱料、蒜子、洋葱、西芹、八角腌渍20分钟。3、锅内放入黄油,小火烧化后放入干辣椒节小火煸香,下鱼头和腌渍鱼头的小料小火煎1分钟,将鱼头翻过来再用小火煎1分钟,烹入二锅头白酒小火出香,入鲜汤小火焖15分钟,用味精、白糖调味后撒香菜出锅,装入盘中。4、焖制鱼头的同时将荷叶饼放入笼中大火蒸8分钟至熟,取出放入盘中围边,用青、红椒圈点缀后上桌。

  调料:盐8克,味精5克,鸡精15克,胡椒粉8克,猪油80克,黄酒20克,cheap classic cardy ugg boots,葱段、姜片各25克,鸡蛋清100克,色拉油90克,料酒15克,玉米淀粉75克,泡打粉0.5克。 . t1 G. S+ t# }5 A! k
  制作:1、花鲢宰杀治净,重新部往下8厘米处开刀,取头部,从腹部开刀,沿中骨将鱼尾部分的鱼肉片下,撕去鱼皮,ugg boots classic cardy。2、鱼肉去骨,鱼肉用纱布包裹后用清水冲刷干净,放入打浆机内大略地搅一下,用纱布吸干水份;鸡蛋清放入搅拌机内打成蛋白备用;鱼肉放入搅拌机内搅打成蓉,拌入打好的卵白,加盐5克、鸡精10克、玉米淀粉、泡打粉搅匀。3、锅内放入沸水,烧至70℃时放入汆成直径为3厘米的鱼圆小火浸煮5分钟至鱼圆浮起,捞出备用。4、锅内放入色拉油50克,烧至六成热时放入葱段、姜片各15克煸香,入鲫鱼小火煎2分钟,将鱼身翻过来再用小火煎1分钟,烹料酒出香,放入清水2千克大火烧开,改中火烧30分钟至汤色雪白,过滤备用成鱼汤;平底锅内放入色拉油40克,烧至五成热时候别将2个鸡蛋放入锅内小火煎2分钟至两面金黄。5、黑木耳用清水浸泡30分钟,洗净泥沙,入沸水中大火汆0.5分钟,捞出控水;笋片入沸水中大火汆10秒,捞出控水备用。六、锅内放入猪油,烧至五成热时放入鱼头小火煎2分钟,将鱼头翻过来再用小火煎1分钟,下葱段10克、姜片10克、黄酒烹香,cheap ugg boots outlet,入熬好的鱼汤大火烧开,打去浮沫后放入汆过水的火腿、黑木耳、鱼圆小火烧至汤白,用盐3克、味精5克、鸡精5克、胡椒粉调味,出锅倒入沙锅内,放入钱袋蛋后上火小火烧5分钟,撒香菜即可。

  制作:1、花鲢鱼头治净,所有为二;锅内放入色拉油,烧至四成热时放入鱼头小火滑1分钟至定型,捞出控油;洋葱洗净,对半剖开,撕成重约5克的瓣;西芹洗净,切长4.5厘米的段。2、取一平底锅,放在文火灶上,入色拉油30克小火烧至六成热,放入洋葱片、蒜瓣、西芹段小火煎5分钟至出香,取出备用。3、西兰花洗净,切重约10克的块,入沸水中大火汆1分钟,捞出控水。4、锅内放入色拉油30克,烧至七成热时放入葱段、姜片、干尖椒小火煸香,烹黄酒,入红油辣酱、海鲜酱小火炒香,入盐、毛汤、白糖中火烧开,放入鱼头大火烧20分钟至熟,用味精、鸡精调味小火烧开,淋红油出锅。五、取一烧热的平锅,用西芹段垫底,将烧好的鱼头放入平锅内,周围用洋葱、蒜瓣、西兰花围边,上桌即可。 7 a- |% V( Q1 V0 v2 v* ?5 U

  备注:调好味的刀口辣椒的制法 干锅烧热,放入50克菜籽油,烧至三成热时放入去籽的干辣椒120克、花椒(重庆四周山产的花椒放入50℃的温水中浸泡5分钟,取出控水即可应用)100克小火炒至干辣椒变为金黄色,出锅,把辣椒、花椒一块儿剁成细末。取净锅烧热,下香草30克小火炒至酥脆,取出剁成细末。取净锅烧热,下白芝麻40克小火炒香。最后将混有花椒的辣椒末、香草末、芝麻入盛器,加入十三香10克、李锦记海鲜酱10克、白糖5克、白豆腐乳80克调匀即可。2 Y' o; G& G5 h! i. g" W
